Mon 14th - Chicken schnitzel, potato salad & mixed greens

Well making use of leftovers tonight, hence the potato salad which is left over from last nights bbq. Will post a photo once meal has been cooked.

Rels tatie salad

1kg baby taties, quartered and boiled for 10 mins
5 bacon rashers, chopped roughly
1 onion finely diced
200gm baby spinach, shredded
1/2 continental cucumber, halved lenghtwise and finely sliced
3 hard boiled eggs, chopped

Dressing: 1/2 cup good quality whole egg mayo, 1/2 cup lite sour cream, handful finely chopped dill. Mix together.

Place taties in a bowl. Saute bacon and onion in some butter until cooked, add to taties. Add spinach, egg and cucumber to taties. Combine with dressing. Use as much or as little dressing as you like. Dressing will keep in the fridge for 3-5 days and is also great on pasta salad or seafood salad .
