Busy busy busy would be an apt description of this week ! Lots of cooking, cleaning, tending to mini-men and not much time for anything else.

Although I did manage to sneak some shopping into the timetable today *blush* Just as well, as I picked up a set of three Robert Gordon cake/biscuits tins from Spotlight of all places for the bargain price of $24.95. I also got two gorgeous big white serving bowls for $10 each reduced from $14.95.



Made a chocoalte chip oatmeal slice on Wednesday which has been a great hit, although next time I will add some chopped macadamias (if I can resist eating them beforehand, lol)....It woudl also be lovely with some melted choclate drizzled over the top .Recipe for the slice is:


Melted butter, to grease
75g (1/2 cup) self-raising flour
75g (1/2 cup) plain flour
90g (1 cup) rolled oats
70g (2/3 cup) desiccated coconut
140g (2/3 cup, firmly packed) brown sugar
1/2 cup chopped macadamias
190g (1 cup) choc bits
125g butter, melted, cooled
1 egg, lightly whisked
Method
Preheat oven to 180°C. Brush a 17 x 27cm (base measurement) slab pan with melted butter to lightly grease. Line the base and 2 opposite long sides with non-stick baking paper, allowing it to overhang.
Sift the combined flours into a bowl. Add the oats, coconut, sugar, macadamias and choc bits, and stir to combine. Make a well in the centre and add the melted butter and egg. Use a wooden spoon to stir until well combined. Spoon mixture into prepared pan and use the back of a spoon to smooth the surface.
Bake in preheated oven for 20 minutes or until golden brown and firm to the touch. Remove from oven and set aside to cool completely. Cut into squares to serve.


Jake is on his first ever school excursion today to the Zoo. There was great excitement this morning as 60 or so preppies piled onto the bus, for many this was their first time on a bus. And I swear I didn't even shed a tear (well, not many anyway, *sigh*) Our little boys is growing up way too fast !
